Honestly, if it’s not in the wiki, it has a high chance of being in the Bay12 forums, people perform a lot of Dwarven !!SCIENCE!! over there. Before the Steam release, there wasn’t really a hospital occupation of doctor, there were the doctor related labors (Diagnostician, Surgeon, Bone Doctor, Suturer, and … one other I can’t remember off the top of my head). Whatever needed doing in a hospital zone would get done by whatever dwarf had the correct labor active. Surgeons would come and operate, suturer would sew up afterwards, etc. All doctors would service all hospital zones.

So, for the Steam version, I’m going to guess here, that it still works similar. But with a little bit more control in that you can assign which dwarves are even assigned to the hospital.

For things like taverns and temples it might be a little different. I think that if you assign a tavernkeeper, performer, or dancer, that is almost more like another labor.
